Want caramel? Don’t want a sticky mess that you’ll probably be cleaning up for weeks to come? Then try out this Tahini Date Caramel.
This sweet treat just requires three ingredients, a few minutes of hands on time, and is naturally vegan and refined sugar free. It’s good for you and for saving you time during the day! With a base of nutty tahini and gooey dates, this condiment is packed with nutrients, fiber, and healthy, satiating fats.
It pairs perfectly with apple slices, ice cream, or chocolate. It also makes a great sweet addition to your charcuterie board at your next party. Since I’m not much for throwing parties (or going to them...or people) my favorite way to enjoy it is slathered on thick, crusty toast with a sprinkle of chocolate chips. Make a big batch and enjoy this Tahini Date Caramel all week long.

Recipe
Makes about 10 Servings
Ingredients;
120 g - Pitted Medjool Dates
56 g - Tahini
1 tsp - Vanilla Extract
240 ml (1 cup) - Boiling water
Instructions:
In a bowl, add dates. Pour over boiling water. Allow to sit for at least 30 minutes or until dates are soft.
Drain dates. Reserve the liquid.
To a high speed blender or food processor, add dates, tahini, and vanilla. Add about 120 ml of the date liquid.
Blend until completely smooth. If mixture is too thick, add date liquid 1 tbsp at a time until desired consistency is reached.
Pour into a jar and store in the fridge for up to 2 weeks.
Enjoy with apples, on ice cream, on toast, or straight out of the jar.
