Need a ridiculously easy appetizer to start off your socially distanced thanksgiving with? How about these adorable Sweet Potato Casserole Stuffed Dates?
Cute is not all they are though. They’re also easy to make and healthy(ish) for you! All you need is some pitted dates, sweet potato, mini marshmallows, and 15 minutes to make an appetizer that’ll have even your crabby aunt cracking a smile.

Recipe
Makes 18-20 Dates
Ingredients:
320 g (18-20) - Medjool Dates
180 g - Sweet Potato Puree - Sub pumpkin puree
20 g - Honey - Sub maple syrup for vegan
20 g - Mini Marshmallows - Use vegan if needed
½ tsp - Vanilla Extract
½ tsp - Ground Cinnamon
Instructions:
Pit medjool dates. Leave intact so they can be filled.
In a bowl, mix together sweet potato puree, honey, vanilla, and cinnamon,
Spoon sweet potato mixture into dates.
Place mini marshmallows on top.
Optional: Place in broiler for 1-2 minutes or until marshmallows are golden brown.
Serve.
