Is it your dream to eat strawberries and cream everyday? Well, that dream can become a reality with these Strawberries and Cream Overnight Oats!
Don’t let these adorable jars jars fool you, they pack a nutritional punch into your morning! They’re loaded with plant based protein, fiber, and even *gasp* a vegetable! With these in your fridge, you’ll be able to enjoy the delicious combo of strawberries and cream while still being able to take on your busy day.
Now, you may be asking: “how can you achieve such a creamy texture with no dairy?”. Even if you’re not asking that, I’m going to tell you anyway. From tofu! Silken tofu to be exact. Now before you turn your nose up at me like you do when you see a strawberry covered in a furry coat at the back of the fridge, hear me out. Silken tofu is bland on its own, meaning you can’t taste it, especially when it’s blended until it’s as smooth as (vegan) butter. It’s also been used in Asian desserts for decades, so adding it to sweet dishes is not new.Plus, it’s loaded with protein, which helps to keep you feeling full and satisfied.
Before serving, I like to add a dollop of Greek yogurt for an extra layer of creaminess and protein hit. If you’re vegan, feel free to use your favorite plant based yogurt. Toss on some freshly sliced strawberries and dive in!

Recipe
Makes 3 Servings
Ingredients:
200 g - Frozen Cauliflower Florets
280 g - Frozen Strawberries
20 g - Hemp Hearts
30 g - White Chia Seeds*
250 g - Silken Tofu
42 g - Maple Syrup
90 g - Rolled Oats
255 g - Greek Yogurt - Sub coconut yogurt for vegan
¼ tsp - Kosher Salt
1 tsp - Vanilla Extract
Fresh, Sliced Strawberries - For garnish
Instructions:
Add cauliflower and strawberries to a microwave safe bowl. Microwave for 2-3 minutes or unil defrosted.
Add cauliflower, strawberries, hemp hearts, chia seeds, tofu, maple syrup, salt, and vanilla to a blender. Blend until completely smooth*.
Add mixture to an airtight container and store in the fridge for up to 4 days.
When ready to serve, add fresh strawberries to a glass jar, add in overnight oats, and top with yogurt.
*Notes:
You can sub black chia seeds, but the color will be affected.
If the mixture is too thick while blending, add 1-2 tbsp of plant milk until desired consistency is reached.
