This take on your favorite fall drink is perfect any time of day. Unlike most lattes though, this nice cream is loaded with fiber and nutrients, so it makes a great dessert or breakfast to pair with your autumnal drink of choice.


I personally like to make this caffeine free with a bit of decaf instant coffee powder so I can enjoy it at night. If you’re having it in the morning though, feel free to use that good caffeinated stuff! You’ll have pep and pumpkin in your step.


You also don’t need to be skilled at latte art to make this recipe. It’s as easy as dumping everything in a high speed blender or food processor and letting it do the work for you. Recipe:

Makes 1 Serving

Ingredients:

150 g - Pumpkin Purée - prefrozen in an ice cube tray

100 g - Frozen Banana Slices

30 g - Unsweetened Apple Sauce

24 g - Creamy Peanut Butter

18 g - Pumpkin Butter - Sub 10 g maple syrup or omit '

5 g - Instant Coffee - Optional

120 ml - Non Dairy Milk

½ tsp - Vanilla Extract

¼ tsp - Pumpkin Pie Spice - Sub cinnamon, adjust to taste


Optional Toppings:

Granola

Chocolate Chips

Desiccated Coconut

Nuts or seeds

Pumpkin Butter


Instructions:

Place bowl you’re going to use in the freezer for 20 minutes.*


In a high speed blender or food processor add all ingredients except for the non dairy milk.


Add in half the non dairy milk and blend. If the mixture is too thick to blend, add in remaining water gradually until desired consistency is reached.


Blend until smooth. Scrape down the sides as needed.


Remove bowl from the freezer. Pour nice cream into bowl, top with desired toppings, and enjoy!
