Fluffy and filling, a slice of this bread is so good, you wouldn’t know it’s actually good for you too.


This gluten-free, healthy pastry makes for the perfect breakfast or snack. It’s loaded with protein and fiber, which are both key to keeping you satiated during the day. It’s also refined-oil free and sweetened naturally with apple sauce and coconut sugar.

It's also a meal-preppers best friend. There’s very little hands on time and stores well in both the fridge and freezer. Enjoy a toasted slice of it with some fruit for a tasty, easy breakfast all week long.

Recipe:

Makes about 8-10 Slices

Ingredients:

140 g - Unsweetened Apple Sauce

6 - Large Eggs

1 - Large Lemon - Juiced and zested

48 g - Tahini

40 g - Coconut Sugar* - Sub granulated sugar of choice

12 g - Poppy Seeds

38 g - Vanilla Pea Protein Powder - I used Nuzest

50 g - Coconut Flour

½ tbsp - Apple Cider vinegar

½ tsp - Vanilla Extract

½ tsp - Lemon Extract - Optional but recommended

¼ tsp - Kosher Salt

½ tsp - Baking Soda

1 tsp - Baking Powder

Powdered sugar - for dusting


Instructions:

Preheat the oven to 350F.


Line a loaf pan with parchment paper.


In a bowl, add applesauce, eggs, lemon juice and zest, tahini, sugar, apple cider vinegar, vanilla, and lemon extract. Mix until well combined.


In another bowl, mix together poppy seeds, protein powder, coconut flour, salt, baking soda, baking powder.


Add dry ingredients to wet. Whisk until well combined. Do not overmix.


Pour mixture into loaf pan. Bake for 42-45 minutes or until a toothpick comes out clean.


Remove from the oven. Allow to cool completely before slicing.


Dust powdered sugar over the top. Top with yogurt and honey and enjoy.


Store in the fridge for up to 4 days.


*Notes:

  • You may need more or less sweetener depending on how sweet your protein powder is.
