I’m a hard core black coffee fan. My go-to starbucks order is always a grande americano, black. I always sneer at the whipped creme, unpronounceable drinks people carry with them on their way to class as I stain my teeth with my “true” coffee.
Quarantine must have messed with my head because I have become borderline obsessed with the “dalgona coffee” trend. If you haven’t seen it, you must not own a phone or use the internet. It's a fluffy coffee drink topping that is made by whisking together equal parts instant coffee, sugar, and hot water. The combination of being stuck inside, not wanting to do my homework, and wanting to give my electric whisk collecting dust a little extra love forced me to try it. . .and I’ve made it everyday since. I don’t have a problem! You’re the one with the problem!
This fluffy topping is usually served over iced milk, but I’ve never been one to make the “usual”. I’m also all about efficiency, so I decided to have my breakfast and morning coffee all in one! I put it over my chia pudding and it’s the caffeinated breakfast of my dreams.
It also could not be a simpler breakfast, just make a half batch of Chia Seed Pudding, whisk up the dalgona coffee ingredients in the morning, and enjoy! It’ll put some pep in your step while also providing you with a nourishing breakfast at the same time.
I garnished mine with some cocoa powder and a homemade vegan protein bar (recipe coming soon!).

Recipe:
Makes about 2 servings
Ingredients:
254 g - Chia Seed Pudding - Half a batch
8 g (2 tbsp) - Instant Coffee*
16 g (2 tbsp) - Coconut Sugar
20 ml (2 tbsp) - Hot Water
Instructions:
Add instant coffee, coconut sugar, and hot water to a large bowl. Using an electric hand mixer or whisk*, whisk the ingredients together until the mixture is a light caramel color.
Portion chia seed pudding into two glasses or bowls. Top with coffee mixture and enjoy!
*Notes:
I like to use decaf since 8 g of instant coffee is a lot of caffeine, but feel free to use whatever you like as long as it is instant coffee granules.
You can use a hand whisk but it will take much longer than an electric hand mixer
