Seems like everyone’s favorite quarantine baking activity has been banana bread. But you’re not like everyone else. You’re unique, just like this Chocolate Chip Banana Bread Granola!
This granola is basically a loaf of banana bread in a crunchy, cluster form. Plus, no waiting in agony for your bananas to ripen to get your banana bread fix. It’s a vegan granola that makes for the perfect healthy snack or breakfast option. It’s packed with plant based protein from the chia seeds, peanut butter, peanut flour, and peanuts (did I mention there’s peanuts in here?). The oats and crisp corn flakes will provide you with slow burning energy to get you through the day. On top of that, it’s dotted with mini, dark chocolate chips and freeze dried bananas, giving you a touch of sweetness in every bite.
Not to mention, this meal prep recipe could not be easier to make. Just toss everything in a bowl, throw it in the oven, and, in about 40 minutes, your house will smell like you slaved all morning making banana bread.

Recipe:
Makes about 12 snack size servings
Ingredients:
120 g - Rolled Oats
40 g - Corn Flakes - Crushed
36 g - Chia Seeds
24 g - Peanut Flour/Powdered Peanut Butter
15 ml - Refined Coconut Oil
64 g - Natural Peanut Butter
60 ml - Maple Syrup
45 g - Freeze Dried Bananas - Crushed.
30 g - Roasted Peanuts - Crushed
30 g - Mini Chocolate Chips
¼ tsp - Kosher Salt
½ tsp - Cinnamon
Pinch - Sea Salt Flakes - Optional
Instructions:
Preheat the oven to 300F.
To a large bowl, add in rolled oats, cornflakes, chia seeds, peanut flour, salt, and cinnamon.
In a small saucepan over medium heat, add in peanut butter, maple syrup, and coconut oil. Stir until well combined.
Remove the saucepan from heat, and pour peanut mixture over the oats. Mix until oats are well coated.
Pour mixture onto a greased or parchment lined baking sheet. Bake granola in the oven for 40-45 minutes, flipping the tray halfway through.
Remove from the oven and sprinkle over sea salt before allowing to cool completely*.
When cool, pour over chocolate chips, peanuts, and freeze dried bananas. Break the granola into clusters.
Store the granola in an air tight container on the counter for up to 2 weeks.
Notes:
The mixture will still be slightly damp coming out of the oven. It will firm up as it cools.
You can add the chocolate chips in right out of the oven if desired. They will melt and help the granola to form clusters.
