Beet Beauty Cubes

I never really grew out of the “playing with my food” phase. It mostly just evolved into me seeing how weirdly shaped, colored, or textured I could make my food using natural ingredients. Sometimes I get lucky with a recipe that checks off all three boxes. These Beet Beauty Cubes definitely hit the mark.

These guys don’t just have “beauty” in their name because of their pink hue. They make you beautiful too! They get their chewable, pudding texture from a mix of Collagen Gelatin and coconut butter. Collagen is not just a great protein source, it also has been linked to keeping joints and bones healthy as well as promotes and supports skin, hair, and nail growth.

Their natural pink color is also a key player in why these cubes should be part of your beauty regimen. They’re colored with beet powder! Beets are known for keeping your brain, eyes, gut, and heart healthy from increased blood flow. The improved blood flow can help with workouts as well as improve your mood. Popping 1 or 2 of these before a tough workout will help you push through and smile while you do it. Okay, I don’t think I’ve ever smiled while doing a plank, but maybe if I eat a whole batch of these I might smirk.

Recipe:

Makes about 16 small cubes

Ingredients:

64 g - Coconut Butter or Mana*

8 g - Beet Powder - I like this brand from Amazon

15 g - Collagen Gelatin - I like Vital Proteins brand

120 ml - Warm Water

20 ml - Maple Syrup


Instructions:

To a blender, add all ingredients to a blender. Blend until smooth and creamy.


Pour mixture into a small, freezer safe dish lined with parchment paper. Cover and freeze for 2 hours or until it is a jelly consistency.


Slice jellies into cubes. Store in the fridge for up to a week. Enjoy pre or post workout or whenever you’re craving something sweet.


*Notes:

- Ensure it is coconut butter not oil
